Arugula Avocado Salad with a Zesty, Citrus Dressing

1 bag of organic arugula
1.5 avocados, cubed
1 cup fresh or frozen (thawed) non-gmo corn
Chopped cilantro, add to taste
2 handfuls organic tortilla chips, crushed to add after the dressing (optional)
Sprinkle of sea salt over the top of the salad


1/2 avocado
2 tbsp Vegan or Paleo friendly mayonnaise
3-4 tbsp organic orange juice
3-4 tbsp lime juice
1/4 cup extra virgin non-gmo olive oil
2 tbsp local honey, organic maple syrup or agave
Handful cilantro
Sriracha to taste
Sea salt or pink salt, to taste
Drops of filtered water to thin, if needed

Toss into a food processor or powerful blender such a vitamix and voilá. Team tip: Taste as you go and play with the different measurements to create your own balance of perfection and crowd-pleasing needs. Making it a few hours ahead for extra taste factor to settle in and get those dressing ingredients to cozy-up together. Prep salad section just before guests arrive and dress and toss right before serving. Serving size: 4-6
